Cornmeal scone recipe
Within the past few weeks I read a recipe in a magazine for cornbread scones using Jiffy Mix, and now I can't find the magazine. Internet seach gives me lots of choices, but I'd like something that is tested and works. I'm planning on seving scones with 15 bean soup tonight. Does anyone have a recipe they like? I have a good cornbread recipe but I wanted to try something different. I have a bag of stone ground yellow cornmeal from White's Mill in Virginia, so it can be a scratch recipe - or I can go with the Jiffy mix.
The Cheese Board cookbook has a great cherry corn scone (see link below), but the result is rather sweet. I suppose one could tinker with it (i.e., cut back on the sugar, omit the cherries) to get something less sweet, but I'm not confident enough in my baking skills to suggest how the recipe might have to be adjusted otherwise.
If you don't use this for tonight's meal, I would definitely recommend the unadulterated version for tomorrow's breakfast. ;-)
