Vegas Recs: SW Steakhouse, Buffet, etc.

I'm going to Vegas in mid-November. I went last year and got a wonderful rec out of lunch at Rosemary (wonderful!). This time around, I'm looking for a steakhouse rec and a rec for the best buffet.

STEAKHOUSE:
How is SW Steakhouse? I have reservations there, but I can still look elsewhere. I was going to go to Craftsteak, but the reservations are pretty full. Where would you recommend going? Should I go to SW, or has it gone downhill? What about N9NE? Should I go there instead?

BUFFET:
I really enjoyed the Wynn the first time I went. It was superb. I went last year, and it would good but not as good as the first time. I'm a big seafood fan. Should I try Bellagio's buffet this time? I thought about going to the Mirage, but after reading the recs here, it sounds like it's not on par with the Wynn or Bellagio. Comments?

I much prefer n9ne to sw, but n9ne is a bit louder and more trendy. If you dont like that atmosphere you may enjoy sw more. But steaks are much much better at n9ne, as are the sides and desserts. If you want a more formal steak place go to prime in bellagio. Its second only to n9ne, and beats it in several ways.

Unfortunately, can't get any reservations to Prime.
