Everyone I know loves creme de menthe brownies, but I've had several requests for a similar style brownie with a peanut butter layer replacing the creme de menthe layer. I'm really not a recipe-creator - does anyone have a similar recipe? Or do you think I could just try that peanut butter frosting everyone seems to love on the Elvis cake - is it stiff enough?

Dorie Greenspan has a pb fudge brownie recipe that's very good:

The pb is similar to the elvis cake pb frosting (which would be stiff enough for the brownies if you added less milk).

I love the mint ones too! Look no more and give these a try. http://www.epicurious.com/recipes/food/views/236893

These have become my pb brownie go to after a multitude of attempts at other recipes and methods. Just made a batch last night using an alternative method---pb cups from the Halloween booty (broke up 6 cups and added to my favorite brownie recipe.)

I use the Epi pb layer and ganache, but my own fudgey brownie recipe and I half it using an 8x8 pan. These freeze beautifully too. Enjoy

OOps. I guess the Epi recipe is Dorie's, so I guess that makes 2 votes for these!
