What to Serve with BBQ Chicken

RVAwino Nov 2, 2007 09:40 AM

I need a great side dish to serve with slow cooked BBQ Chicken. I want something less picknicky than slaw or french fries. Some good veggies and a hearty starch. Any good ideas?

How about corn bread? Sweet potatoes are a huge favorite with my family, baked, roasted, whatever....or maybe some sort of green beans?

How do you make your slow cooked BBQ chicken - is it a crockpot recipe? I just hauled mine out, and am looking for something new to try...

Thanks for the ideas. I love sweet potatoes.

I have made this in a crockpot before, but I like the oven method better. I put a rub on the night before with sone sauer's bbq and apple cider vinegar. Then I bake for 2 1/2 hours @ 250 degrees. I finish it off on the grill to get it all nice and crispy. Yum..

why are slaw and french fries "persnickety"?
i was going to say a nice creamy potato salad.
marinated edamame or a homemade three bean salad. a little vinegary to offset the sweetness of the bbq chick.

Believe the OP meant "reminiscent of a picnic."

Roasted Red Gourmet Potatoes come to mind. A little EVOO and fresh toasted Garlic on them. Sliced Zuchinni and Summer Squash, grilled for a few minutes and drizzled with a light Balsamic Dressing.

yes i was also thinking of the squashes! but now they are out of season, right? they would be nice and light. and so good, grilled. and i would keep the dressing light so as to not overwhelm the delicate flavors of the squash.

not mentioned yet is a corn relish. Roasted corn, onions, peppers (multi colored sweet and hot), cilantro spalsh of lime.

Potatoes au gratin, twice baked potatoes or scalloped potatoes along with sauteed haricots verts.

Slow cooked beans with sofrito, a pinch of cumin and maybe a ham hock. Pinto, mayocoba or flor de mayo beans are the best for this kind of side dish.

Well if you don't want to serve a creamy potato salad ( which I think is the best side dish for it), then I would go with a corn pudding or potato au gratin...and absolutely some corn bread, maybe some really slow cooked good green beans...
