The idea is that you can leave the whole thing in the freezer and then use it as an ice bucket or to chill a bottle of wine when you're not making ice cream, and there aren't as many parts to clean. I also recently acquired an Il Gelataio 800 by Simac that appears to be in new condition. The only thing that came with it was a hardbound 5" x 7" book of recipes with instructions for three different Simac models. There was no user manual or instructions covering the operation of the machine. The Simac website offers downloadable manuals for their two current models, but none for their older ones.
