Peanut butter frosting recipe needed

Any favorites? Please post them here! I'm making rich chocolate cupcakes that I'd like to top with a peanut buttery frosting of some sort. Thanks!

  1. I like this one from the chow-famous Elvis Cake:

    Frosting
    2 sticks of butter, room temperature
    1 ½ cup of smooth peanut butter.
    Up to 4 cups of powdered sugar (start with 2 ½ and add to taste)
    Up to 2 Tbs milk

    In an electric mixer cream together the butter and peanut butter until smooth and fully incorporated. Add the powdered sugar a cup at a time and use milk to adjust the consistency to your liking.

    2. I like the Elvis one, but I substituted cream cheese for half the butter.

          In the end I did half butter and half cream cheese, and then I added a bit more peanut butter along the way. This was delicious! Thank you both!

              Thanks! The cupcake recipe is the chocolate cake recipe from the Barefoot Contessa's first cookbook (the one with the fabulous chocolate buttercream.)
