Cranberry Bread (p. 308 - 25th Anniversary Edition)

I liked the addition of orange juice and orange zest in this loaf, along with cranberries and chopped walnuts. It was really good, as suggested in the book, sliced, toasted and buttered (especially with sweet butter from the Vermont Butter & Cheese Co.) The authors say to wrap and put away for 1-2 days before eating. Of course, I couldn't wait and had a slice the day I baked it, but today it was even better - the flavors had melded and you could taste the orange even more. It would be nice as part of a Thanskgiving bread basket too.

I served this as part of our Thanksgiving feast and am so glad I made an extra loaf. The scent of orange as it bakes is so appetizing. It's lovely to look at with all of the cranberries and walnuts poking around. It would make a great holiday gift.
