I just got my ice cream maker a couple of weeks ago so I could make healthy low fat and no sugar alternatives to ice cream.  I made this one last night and it was as good as the full fat sugar ice creams.  Anyone else have healthy ice cream recipes?
I made this one up after researching other recipes.

Pear &amp; Toasted Pecan low fat Ice Cream
 
3 ripe pears - peeled and diced
2 cups skinny cow non fat milk
1 tablespoon non-fat powdered milk
1 tablespoon corn starch
1 egg yolk
1 vanilla bean 
1/4 cup agave syrup
1/2 cup toasted chopped pecans
 
 
Heat agave syrup and when hot add pears.  Cook for about 5 minutes until pears are cooked through.
 
Heat milk, corn starch, powdered milk and 1 egg yolk -- whisking until just below boil and thickened enough to coat the back of a spoon.  Pour 1 cup of hot custard into agave pears whisking  --- then pour in the rest of the milk/custard mixture.  Scrape vanilla bean in the custard pear mixture.   Cool mixture to room temperature.
Blend until smooth in a blender.
Refrigerate until cold.
Then freeze in ice cream maker.
 
Toast pecans in a dry pan.  5 minutes before ice cream is done -- add the pecans.</content>
