I live near Mystic. There is a great health food store there and I know they have it. Whole foods should have it. Did you mean a store or a restaurant? If you get adventurous, there are lots of recipes out there to make it.

I'm pretty sure that Wild Oats at Bishops Corner in West Hartford carries seitan. They're part of the Whole Foods family now, but have retained the Wild Oats name. I much prefer them to the Whole Foods store in West Hartford center for bulk and other items.

Several kinds of seitan can be found at New Haven's Edge of the Woods market--but it's also pretty easy and much cheaper to make it yourself. Try recipe at post-punk kitchen website or in Vegan with a Vengeance cookbook.
