Oily lumps in gumbo?
I've cooked many things in my life, but this is my first gumbo! After making the roux, stirring in all the veggies and stock, I'm getting a bit of an oil slick on the surface of my gumbo. I whisked in the stock slowly, but there were still some lumps. It's still reducing down, and I'm trying to whisk it in, but are there any pointers out there? Is this normal? Should I skim it off? Will it eventually combine into the gumbo? Any fast help is appreciated as this is on the stove as I type :-)
