Pistachio Paste

Does anyone have a favorite recipe or two using pistachio paste? I'd like to set up a little demo at the shop to help stir up some interest in it. I checked the website of the producer and they have very little. One that seemed simple was just blending a can full with a block of cream cheese into a spread. I thought garnishing it with some chopped pistachios would be appealing. I am open to all suggestions.

    I'm wondering if you could incorporate it into a creme anglaise? Then strain maybe? I know I've used it for something, but it's not coming to mind right now. It's sweet right? I'm not sure how tasty it would be as a spread with cream cheese as a savory.

      Believe it or not, pistachio paste is AMAZING on top of baked salmon. Garnished with some chopped pistachios as you suggest is even better. You can even mix it with some other herb and basil sauces to get an interesting flavor for the fish.

        This may be a bit more complicated than you're looking for but I saw a wonderful blogpost on using the pistachio pasta in French Macarons (used it in the filling.) I can assume from the blog that you can simply make some pistachio buttercream them if you don't want to go through the trouble of making macarons. http://shewhoeats.blogspot.com/2004/1...

          Depending on the consistency, you could make a cake out of pistachio paste. Something along the lines of Claudia Flemings hazelnut cake using the pp instead of hazelnut paste. She adapted a Chez Panisse recipe that originally calls for almond paste ground up with sugar, it is a very moist cake. I've made it both ways and it's delicious, probably all that butter.:)

            Ohyes, this can be done, and it's DELICIOUS! Pistachio cake is really -very- good, mixing the paste in both the batter and the frosting, or just go with a cream cheese frosting. I've had it both ways, and it was really very very good.

              Great idea. I was looking at a recipe on Epi. for a chocolate torte that called for home made pistachio paste. It got very mixed reviews and was vague about how much of the paste to use. It just said to remove 1/3 C. and reserve for later use. It did not say how much to use in the torte itself. I may make a ganache to go along side. Thanks!

              Pistachio ice cream or gelato....delicious, also might help you sell an ice cream maker or two.

                Yeah, pistachio ice cream/gelato was the first thing that came to my mind.
