POMMES FRITES MADE FROM MASHED POTATOES

WHEN I WAS YOUNG MY MON AND I WOULD GO TO THIS GERMAN IMBISS TO GET THE FRENCH FRY'S.I WAS TOLD THAT THEY WERE MADE OUT OF MASHED POTATOES?WOULD ANYBODY KNOW WHERE TO GET THE RECIPE? I TRIED EVERYTHING BUT CANNOT SEEM TO FIND ANYTHING.THANK YOU IN ADVANCE FOR ANY HELP.

  1. Hi,

    There was recipe in a food magazine, maybe a year ago, for these incredible fried puffs of potatoes, that were made with mashed potatoes, egg yolks and ..... It was either Gourmet or Bon Appetit. They were a lot of messy work, but by God, they were incredible. I will look for it and post again.

    Found it. It was indeed in Gourmet - January 2006 - where they did a restrospective of recipes from the last 65 years. This recipe was from 1957, and they called them Pommes de Terre Lorette - they call them an impossibly light version of french fries.

        Post a follow up here when you make them. Like I said, a lot of mess and work, but sooooooo worth it.

          Actually when I googled the name,I got a few different sites with the recipe,so thanks again for helping me with this one,

            I'd like to see the recipe you have maison. I always have leftover mashed potatoes.

                That does look like a tricky recipe. I'm guessing, by reading the recipe, that I can't use leftover potatoes. But I still would like to try it. I have a Super Shooter with a star tip attachment. That would probably work, don't you think? Thanks for sharing that with me.

                  yeah, that would work great. It's not even that it's tricky - I mean chou pastry is sooo easy to make, as are mashed potatoes. It's just messy. But I will say this again, so so so so worth it.
