I have the ingredients but need a method

The ingredients are eggs, spinach, and red potatoes. I have plenty of other standard ingredients (olive oil, reggiano, onions, garlic).

What I have in mind is something more elegant than my usual quick dinner of scrambled eggs, sauteed spinach with garlic, and home fries. Maybe poached eggs and some kind of potato cake? Can I do that with red potatoes (don't you need russet potatoes to shred & make into a cake?)

Any ideas? Thank you!

    Make a nice crustless quiche.

      Try a Spanish omelette - I don't have a tested recipe, but Delia Online has one (and you can easily add spinach...)

        A fritatta with shredded potatoes and your wilted spinach w/ garlic. A bit of cooked and drained pasta could be added to give it body.

          Should have clarified--not interested in making fritatta or quiche or tortilla. I guess I answered my own question--I want to make poached eggs. What to do with the potatoes and/or spinach? I guess I just don't want homefries.

            How about a potato and spinach soup, with poached egg?
