I'd stay at the Hard Rock Hotel, Venetian, or Bellagio (depending on the atmosphere you like) and would dine at Commander's Palace (which is temporarily closed for relocation right now), Delmonico Steakhouse (in the Venetian), or (if your expense account can handle a $300+ per person menu) the chef's tasting menu at Restaurant Guy Savoy at Caesar's (arguably one of the best tasting menus I've ever experienced). For less fancy but good dining, there's the Burger Bar at Mandalay Bay, the Pink Taco at the Hard Rock Hotel (the BEST homemade chips and salsa I've ever had), or the Bellagio buffet (if you're interested in going the buffet route).

I would definitely have to agree with Pink Taco if you're looking for a fun time. The food is just.. perfect, as well as the drinks(strong martinis, can anyone complain about that?). The atmosphere is great too, everyone's always having a blast and not moping around or anything. I would never miss going to this place if I only had a night to be in Vegas!
