fennel and acorn squash

I have a surplus of both... what to do??

(Not necessarily looking to combine them, but that could be interesting too)

  1. This is tasty, could sub your acorn for the butternut. The leftovers also made a nice pureed soup

    1. Fennel roasted with carrots, olive oil, salt and pepper, is a delicious easy side.

      1. Carmelize onions and fennel together and toss with roasted acorn squash. Or combine them with sausage if you would like and sweet peppers and full the squash. Top with a feta.

        I like things that are very flavorful with my acorn, since it is a mild squash.

        I also love the onion/fennel mixture on a pizza with chevre.

        1. This leek and fennel tart was good. I was out of poppy seeds so left those out. It's more like a quiche than anything.
