Easy Steak Frites recipe

Hi, I have a couple of friends coming over for dinner on Friday night (there will be four total, but they are big eaters) and I would like to make steak frites. The only thing is that I work all day, so it would be nice if it was on the easier side. Esp. the fries.

Any suggestions on how to make a relatively quick steak frites? I would love to hear advice on cuts of meat, and sauces as well. Thanks!

  1. Personally, I had my frites in Europe w/ Bernaise, which was a bit much for me. Maybe try something a little more garlicky, thinner sauce. I have been scared to fry anything, but I know with fries (lots of posts on here about home frites) you have to fry twice to get crispy...maybe there is a shortcut. If you are going to make the fries - it takes about 20-30 minutes to peel, and and finely chop the matchstick frites from 6 potatoes for the normal cook (I'm not Iron Chef!). Maybe you could do that the night before?

      If you have a mandolin slicing the fries is a breeze. If not maybe you could do a mashed potato or some other sort of starchy puree? As for a sauce, a simple pan sauce with a tenderloin is a pretty great thing. Just sear the meat and deglaze with red wine and some beef stock then reduce. You can throw in some garlic and shallots then strain it if you'd like.
