Fermented black bean recipes?

I made an excursion to a chinese grocery store yesterday; on my list was "fermented black beans" for a recipe I'm making this weekend. I didn't write down how much I needed, so I picked up three bags of the things (maybe 8 oz each)--they were ridiculously cheap. I got home and saw that I'll need 2 tablespoons of the beans for my recipe (they must be strong!)-- I hear these keep forever, but do people have favorite recipes using them? Thanks in advance--

    i made a nice marinade using fermented black beans. i combined them with grapeseed oil, a bit of hot chili oil, a splash of dry sake, chopped shitake mushrooms, garlic and shallots, salt and pepper. I used it for chicken, but i'm sure it would be good for other ingredients. i used the little that was left in the bowl (not the bowl with the raw chicken, of course!) as the base for a really good salad dressing - just added more oil and a touch more sake. delicious!

      I love black bean sauce. Great on cauliflower or for thick pork chops.Great flavor!

        I became addicted to this recipe for Shrimp and Mushrooms in Spicy Black Bean Oyster Sauce last winter. It's better than any black bean sauce dish I've ever had in a Chinese restaurant. I even served it to company once and they loved it almost as much as I did.
