Potato salad- in advance?

I'm making a baby octopus and potato salad (without mayo) and I was wondering how far in advance I could make it. I will serve it room temp. I assume you should pour the dressing on the potatoes while their warm. If I let it sit will it dry out?

  1. Is this vinegar based? If so, you should be okay, but I would refrigerate it. I usually put vinegar ont he potatoes when they're warm and refrigerate them. When they cool off I add the rest of the 'seasonings' (for me it was mustard, onions, pepper etc).
