Formula to determine crudite preparation (based on # of guests)

I am in charge of a baby shower and we are going to make the crudite in lieu of buying a pre-made platter, in order to save money.

Does anyone have a formula for calculating the various quantities of vegetables to buy, based on the number of people? I am trying to create a shopping list to disperse among the hostesses and am at a loss.

(Right now the expected guest list is 75 going strong)...

  1. It depends on what other items you will be serving. Is this the only appetizer? If it is I may want to do at least 3 celery, 5 five pound bag carrots, 8-10 red/green/yellow peppers, at least 3 bunches cauliflower & broccoli. If this is the only appetizer I would increase it.
