Whole Foods Mkt. Broccoli Crunch Recipe?
We just came home from a week in San Francisco . . . very full and happy!
One night we picked up misc. stuff at WFM for dinner and I fell in love with "Brococcoli Crunch" - broccoli, bacon, candied cashews, a bit of mayo, some raisins and currants . . . all perfectly proportioned and quite delicious - anyone have the recipe?? They don't do this at our WFM and this is the first thing in a LONG time at the prep'd counter that I've really liked!
I had the ingredient list printed out from my wholefoods in FLA. I LOVE this too! and wanted to make it at home and couldn't find it on there site; wholefoodsmarket.com.
~Broccoli & Candied Cashew crunch;
1 head of broccoli steamed as you like
1/2 cup of each of the following;
Soy bacon bits
Cashews pan seared with sugar and cayenne pepper
Chipolte honey mayonnaise
(I made my own with Veganaise mayo, honey and canned chipolte peppers)
Adjust ingredient amounts to taste and salt to taste
I made it today and it tastes just like it except for i didn't steam my broccoli as long as they do since I like it grean and crisp.

Here is a similar recipe, but not the Whole Foods Mkt recipe. It's in my own words.
Curried Broccoli Slaw with Bacon and Cashews
1-1/2 lbs broccoli crowns
1/2 cup red onion, finely chopped
1/2 cup dark raisins
1/2 cup chopped dry roasted-salted cashews
1/2 cup mayonnaise
1/2 cup sour cream
3 Tbs granulated sugar
3 Tbs cider vinegar
1 Tbs curry powder
1/2 tsp salt
6 slices bacon, cooked and crumbled
Cut broccoli crowns into 1-inch pieces. Place broccoli in food processor. Use pulse to finely chop broccoli but don't puree.
Place finely chopped broccoli in large bowl along with onions, raisins and cashews.
Combine mayonnaise, sour cream, vinegar, curry powder and salt in a small bowl and stir well.
Pour dressing over the broccoli salad and toss to coat.
Cover and refrigerate for at least 2-hours.
Sprinkle bacon bits over salad just before serving.

I have prepared it with raw and blanched broccoli. I like it both ways and think that they blanch theirs.
