Need a use for leeks in my dinner tonight

I'm making a roasted butternut squash risotto tonight and I'd really like to incorperate two large leeks that I bought at the farmers market. Any ideas?

  1. You've probably already had dinner by now, but you could use the leeks as if they were onions (i. e. gently saute them before you add the rice). Some sage might be a good complement...
