Bar Pitti has a decent version.

I saw tripe on the regular menu at A Voce last night. Here's the description: Country-Style Tuscan Tripe borlotti, tomato, fried duck egg. I don't know if that's the dish you're looking for, since I've never had tripe, but maybe it's worth investigating.

Well, you could stand in line at Al Di La down in Brooklyn, instead. I haven't had the tripe at Babbo, but I think the savory tomato style tripe I had at Al Di La was probably the best tripe I've ever eaten.
