How do they cook the lamb at Hutong, HK??

Hi everyone

I am leaving Hong Kong forever in just a few days and I don't know how I'm going to live without those delicious "Hutong style" crispy deboned lamb ribs they serve at Hutong in TST. Does anyone know what they do to get them that delicious?
