Using Pumpkin Butter as a pie base?
When I worked at Williams Sonoma we sold pumpkin butter with tons of recipes on the inside of the label - one of which was for pumpkin pie, using the butter as a base. I have a jar of Trader Joe's pumpkin butter and would love to use it in a pie. Does anyone have a pie recipe using pumpkin butter???
easy as...well, you know:
1 cup cream
1 jar Maple Pumpkin Butter
12 premade tartlet shells or prebaked pie shell (i really like the TJ's premade dough, now sold frozen)
Preheat oven to 350 degrees. Mix the eggs to combine, then stir in the cream and pumpkin butter. Fill the tartlet shells (you will have filling left over—see note below). Bake tartlets 20-25 minutes, until filling is set. Garnish with whipped cream, crème fraiche or whipped eggnog.
Note: The remaining pumpkin filling can be baked in ramekins (in a water bath) for 30 minutes at 325 degrees. Serve warm or chill. For pumpkin brulee, cover the top with turbinado sugar and broil or torch until sugar melts.
