I roast mine lightly with olive oil, kosher salt & pepper. Then squeeze a little roasted lemon over the top.

      My husband loves this dish:
Saute some onion until translucent, add the squash and saute until just soft.
Season with salt and pepper. Add some shredded swiss cheese and cover until melted. Delicious! Of course, don't count the calories!

Butter , a little pepper and a light sprinkle of dill and just a couple drops of lemon.
That what works in my world...

I like to saute it with some sliced onions, salt and pepper, and some thyme.

Second the thyme. The lemony flavor compliments squash.

Third on the thyme. It is wonderful with squash. I do mine exactly like MMRuth (with butter as the base).

I concur with the other posts: the simpler, the better. I've also experimented with dill and feta: grill the squash, mix with grilled onions, dill and sprinkle with feta (that if you are a fan of dill....)

Salt (kosher), pepper, olive oil, on the grill for some nice black or brown marks...simple perfection! Can't beat it.

I'm another vote for simple. I love yellow squash just steamed with onions, salt and pepper. Then, toss with butter or olive oil. Yummy.

I grew up eating yellow squash sauted with diced onions. The sweetness of the onions goes very well. Corn is another addition that works.

That's my childhood memory of yellow squash also and still my favorite preparation.
Now for a southwestern flavor I will sometimes add green chilies and a 1/4 tsp. of cumin.

Onions go well with squash. Slice/dice/chop the onions slightly finer than the squash. Sautee together in your favorite oil (or butter) and add salt and pepper. Oregano doesn't hurt, but isn't necessary.

I agree with simplicity. If I have some I may add some fresh dill; a little goes a long way.

If you can find everglades seasoning- it is the best. White container with all green picture/writing. Publix grocery store carries it. Great also on steak, chicken, and fish!

I like a light sprinkle of spice mix. Current favorites include (all from Penzey's) dry green goddess mix; northwoods; bavarian; and turkish. I also now and again go with just a little smoked paprika, or chipotle, or zatar, or ras-el-hanout. Finish with a little kosher or maldon salt.

Another idea is to cut up a fresh tomato or two into a large dice, drain it in a colander, and once drained, toss that with the freshly steamed squash, some salt, pepper, and olive oil.

Next to nothing. Squash has a delicate flavor enhanced by salt, pepper, butter, maybe a dash of white wine and little to nothing else.

Agreed. Butter is the key as it complements the sweetness of the squash. I assume you mean a yellow summer squash of course. I do find that will hold up to garlic in a rough chop so it is actually more subtle. Also a dusting or fine grate of cheese at the end, allowed to melt, can really bring it together.
