ISO Laurie Colwin's Corn Relish recipe?
Anyone care to share Laurie Colwin's great recipe for Blue Ribbon Corn Relish? It was in one of her books--either Home Cooking or More Home Cooking. I'm away from my book collection with lots of corn and peppers awaiting!! Please, paraphrase--I've made it a bunch of times so I really just need the ingredients and amounts. many thanks, Steph
6 cups corn
1 large diced red pepper
1 green pepper
1 to 1 1/2 cups dark brown sugar
2T kosher salt
2T dry mustard
1 1/2 t ground celery seed
1 1/4 cups cider vinegar
2 cups diced onions
simmer 15-20 minutes then add the onions after the mixture has cooked down a bit.
This does sound good. Do you typically tweak it in any way?
