knife sharpening in the South Bay?
Could anyone recommend a highly skilled and scrupulous knife sharpening service in the South Bay? Thanks.
Has anyone had experience with Williams Cutlery in the Town & Country in Palo Alto, re: knife sharpening (if they offer it)?

I agree with the posters about Perfect Edge, those people know their knives, and they are sensitive to the difference in sharpening something like a Shun santoku vs a Forschner slicer. I suppose you could get your knives sharpened cheaper, or for zero at some places, but if you really care about your knives and you want to have them sharpened perfectly, try Perfect Edge. Also, if your knives have nicks or have lost their tip, Perfect Edge will fix them. They'll sharpen your knives while you wait. I think i paid like $28 to sharpen 6 knives. And while you wait you can indulge your knife fetish looking at all those exotic knives they have on display

Like others, I've had uneven experiences with Williams Cutlery. Sometimes they do a great job, but on a few occasions the knives came back dull-ish (failed to make and remove burr), and on one occassion they took off way more of the blade than they should have. Also, they only sharpen a couple days a week.
I've switched to Perfect Edge in San Mateo, and they're the best I've seen around here, even with difficult uneven edge Japanese knives and serrated blades. They have pick-ups all over the Bay Area, so you may wish to check to see if they have one in the South Bay.

The Williams Cutlery in San Jose, around Camden and Bascom, did a very good job sharpening a few knives for me and certainly didn't change the knife's shape. They were recommended to me by the Sur La Table chef in Los Gatos, who takes all her knives there.
I haven't been to the Williams in Palo Alto, or the Perfect Edge. The latter sounds very good from the recommendations, although San Mateo seems like it's fairly north to be South Bay. :)

I tried Williams once to sharpen a chef's knife many years ago... They knife was in pretty good condition before it went in... I believe they took off way more than was needed and changed the shape unnecessarily... I haven't gone back since... Perhaps others have had better results...
I have however had great luck with Perfect Edge in San Mateo (El Camino to 17th Street, then turn left onto Palm Avenue - it's right on the corner)...
Also, several times a year, the Norcal Wustof representative travels to various retail outlets (or did as of a year or two ago) for knife sharpening... I believe the first two are free and the rest are only a nominal charge (~two dollars each)... She does it right on the spot and will answer all your questions... She'll sharpen any brand knife as long as they are not serrated ones. Perhaps you can contact Wustof to find out her schedule?

I think the Perfect Edge is the service that sends their mobile sharpening unit to my local hardware store, White Oak Hardware, in San Carlos. They're at the corner of Laurel and White Oak, one block off El Camino just north of the RWC border. You drop your knives off on Tues, they're done Weds afternoon. It's a hole in the wall that time forgot. My Wusthofs, Henkels, scissors, Laguioles, steak knives, serrateds...all have come back far better than new. They are surgical-quality sharp, and the low price is well worth it. When I get them back it's like I never knew them in the first place.
One time they repaired the heel of my 8" chef's knife without my asking - so it would rock properly - which cost a bit extra, but obviously was necessary from their point of view. Their expertise in that matter was appreciated, because I wouldn't have thought to ask for it.
