Best mushroom bisque?

mschow Sep 24, 2007 07:40 AM

I bought 3 lbs of assorted mushrooms this weekend at the produce outlet: shitake, portabello, oyster, porcini. and buttons. I'm thinking mushroom bisque. I usually just shoot from the hip when I make it; but would love to hear your best recipe for something new. I have Brandy, Vermouth, shallots, broth, milk, cream, all on hand. Plus, an assortment of herbs growing in my garden that I would love to put to use.
Thanks!

Brandy, now your talking my kind of soup! I recently made a mushroom soup and added sherry. It was very earthy and delicious. I used dried and fresh mushrooms. Here's the recipe for some inspiration: http://piealamona.blogspot.com/2007/0...

Ina Garten did a Wild Mushroom Soup today on her show..it was the episode titled Mystery Guest. It looked delicious and received a 5 star rating. She used white wine, but I think substituting a touch of Brandy would be fine as well.

I've used Amontillado sherry in bisque; have used a dry vermouth once in a mushroom sauce. Both were good.

Thanks, all. I will be making this in the next day or so.
