From the farmers' market this weekend!

What can I do with these for dinner tomorrow night? Anything creative? Thoughts? Obviously, I know about stuffed poppers and pico de gallo and all that. Any special recipes?

If you are unable to use them all they freeze whole very well. I usually grow them and freeze a bunch for use throughout the winter.

Make a different salsa with the peppers, mango, red onion, red wine vinegar, a little evoo, s&p. Serve over chicken or pork. Yum!
