what would you add to this menu?

Not much time to cook so I bought a bunch of stuff - Hummus, Tzaziki, feta cheese, olives, roasted peppers, marcona almonds. Will get bread and pita and maybe make a salad. What last easy thing can I cook or buy to make this more substantial? thanks.

  1. It seems to be lacking any meat, perhaps pick-up some gyros or shawarma

    1. What a delicious spread! How about some chicken breasts or thighs, marinated in olive oil, lemon juice, garlic and oregano, and sautéed, baked, or grilled? Or if you want to stay vegetarian, plenty of feta in your salad.

        I was thinking that looked vegetarian as well so I was going to say an eggplant something - grilled, perhaps, or scooped out and stuffed with sauteed onions, garlic diced EP pulp, seasonings....baked at 375* for about 40 min. or till golden on top. Can even sprinkle some of the feta on top.

      2. I'd suggest chicken or lamb kebabs. In Israel, we used to eat bbq'd steak with hummus in a pita which I loved so that would be an option as well. You could also add rice or fries/oven potatoes.

          Yup. Kebabs are easy to make. Wendy's method would suffice.

          If you want you can go ahead and food process some mint, some pine nuts, and drizzle olive oil in until you get a semi mint pesto.

          If you're really out of time go to a Whole Foods (or your supermarket of choice) they often have premade kebobs.

        2. Assuming you want to stay vegetarian and given that tomatoes are pretty nice right now, I'd add a tomato and cucumber salad.

          Or some vegetarian dolmades but I hate most store bought so that's probably more labor intensive than you're looking for in this instance.

          Other options would be some Baba Ghanouj, Tabouleh, Carrot salad, and/or marinated green beans.

          1. Not sure why you'd get bread AND pita. i would definitely grill some chicken. I would put feta and anchovies in the salad, plus the peppers.

            1. If you are planning on a salad, why not make a ceasar with grilled chicken. It's very easy.

                thanks everyone. I didn't mean for it to be vegetarian - this was what they had at Kalustians - I figured I'd add in some meat somewhere. grilled chicken thighs sounds great - plus a big salad and feta. It won't be bread and pita, I wasn't thinking, but I'll get whichever seems fresher.

              2. You could make fattoush for the salad. Falafel would be great with almost everything you've mentioned, otherwise you could do 10-minute lamb chops: blitz rosemary, lemon zest, olive oil, garlic, salt, pepper in the food processor; pour over lamb chops; broil for 10 minutes; serve. Lamb burgers could also be done quickly with some mint and harissa.

                1. Definitely add chicken kebabs (also known as chicken souvlaki on Greek menus). Marinate or put a Greek herb rub on the chicken. They go PERFECTLY with tzatziki sauce, and feta cheese. I'd also serve a wholllle bunch of lemon :) That's one of my favorite meals! Enjoy!
