Floating Island

It's my father-out-law's 60th birthday tomorrow, and he's been dropping hints about wanting Floating Island. Any good recipes you can recommend?

Also, are we totally mad for wanting to attempt this?

Any tips would be much appreciated!

  1. Floating island is just a poached meringue floating on creme anglais. Easy to make. I don't have a specific recipe, but there are a lot of recipes - one on Epicurious. The biggest key is to poach at a simmer - gently. You can carmelize the top with a torch if you like and some folks fill it as well or top with a caramel or chocolate sauce.

    Oh - and you can of course just melt a good quality custard based ice cream for the creme anglais if you want. Although it isn't that hard to make either.
