Seeking An Old Family Recipe for Walnut Candy

But not just any old family recipe... the one from my family ; )

My great Aunt Ethel used to bring this candy to all family gatherings. She is gone now, and so is the recipe.

Here are some details and maybe someone out there will recognize it and help me return this candy to our table.

I don't know if the candy was from the "old country" but...

Aunt Ethel was Polish and Jewish. She moved to NYC in the 1930's.

The candy was always served on waxed paper as it was extremely sticky! It seemed to consist only of walnuts and honey, but I'm sure there was something else.

It looked like little lumps formed to about 1.5" round.

That's all I can remember. The family would be stunned and thrilled if I turned up with these at Thanksgiving... so thanks in advance for any help.

  1. Gosh Jennalynn, I posted a request for candy recipes earlier today. I have been looking at candy recipes for a few weeks now and I think I have seen one. I will look tomorrow, now that's going to bug me all night. Not sure it is the one from your family, but I know I saw something....now just which book is it in!

        I doubt it would have cream... as back then my aunt kept kosher, so no dairy with meat meals.

        It wasn't hard and crunchy like brittle either, I've found a lot of honey walnut brittle recipes and a lot of honey walnut "fudge" type recipes.

        This was just small "piles" of what appeared to be just honey and walnuts.

      Honey Walnut Candies

      Yield: 30

      LIFESPAN: 2 weeks refrigerated in airtight container in single layers separated by waxed or parchment paper.

      Ingredients

      1 cup honey
      1/4 cup granulated sugar
      2-1/4 cups toasted walnut halves, finely chopped
      30 small square candy wrappers or cellophane

      1. Rinse a clean, large wooden board with cold water. Allow water droplets to remain on board.

      2. Stir honey and sugar together in a large saucepan. Bring to a simmer over medium heat, stirring constantly, until it reaches 220 degrees F.; do not burn. Stir in nuts and continue to cook until it reaches 240 degrees F. (soft-ball stage) or until golden, which will likely be less than 10 minutes.

      3. Scrape mixture onto prepared board. Rinse fingers in cold water and press the mixture out to a flat even layer (about l/2 inch thick); be careful, as candy will be hot.

      4. Let candy sit at cool room temperature until cooled and set, about 2 hours.

      5. Cut into diamond shapes with a sharp knife dipped in water to help prevent sticking. Pick up individual candies with an offset spatula. Wrap individually in candy wrappers.

      1. Wow, did this bring back fond memories of making these candies with my grandmother. As far as I recall, it was just honey and walnuts, no added sugar. The attached recipe looks like it, except instead of flattening it and letting it harden to a brittle, we let it set till sticky and then rolled in waxed paper. Thanks for the memories!

        1. i am looking for the same recipe. my grandmother made it every year. layers seperated by pieces of wax paper. walnuts, ginger? and honey, probably sugar. they were spicy hot is how i remember them, but then i was much younger. my grandmother was from russia, jewish and a great cook. did you have any luck finding the recipe?
