Butcher in Eugene
I'll second Long's, a great butcher both in cut, variety and attitude. They are "fancy" in the sense that most of their meat/poultry is freerange, organic, etc. but they're happily "lowbrow" in their offerings too, almost always have oxtails on hand, and they'll happily get you offcuts of all sorts if you ask.
Longs is one of the best in town for getting your meat on. It's up off Willamette up by 29th. There is also a good one on 7th East of Conger. Longs is fancy, the one on 7th is good but the selection often varies and it's a bit lowbrow. Not sure what you are looking for. I'm also trying a new butcher this year who is breaking down a side of beef for me. I'll let you know if he is any good in a few weeks.
