Having seen the recipe for tongue with capers and cornichons on the NY Times web site, I'm ready to give it a go. So, where to purchase a 3-4 lb. fresh beef tongue in Manhattan?Thanks.
Ottomanelli's, and Lobel's, are two possible providers.
Western Beef has tongue. Occasionally I see it at Fairway and Pioneer, but I'm not always on the look out for it.
yep. i was just in the chelsea/meatpacking western to grab a pork roast and noticed some tongue in there.
I just went to Ottomanelli's today and saw smoked tongue readily available. They said that if you want fresh one they can get it for you, but you will have to buy the whole tongue.
Does the recipe require fresh tongue, or cured?
