Duck Fat Fries in Central Florida

Any hope of finding these here in Central Florida or must I drive to Miami. I personally have never had them but my cousin had them in LA and raves constantly about them, so I figured I would give them a try to see what all the fuss is about.

The Michael Mina restaurant opening at Turnberry will have them.

Can anyone think of a single "resort-based" restaurant like this that has ever succeeded in Miami? I recall about 10 years ago Larry Forgione, who then was one of the hottest chefs in the country, tried to do the same kind of thing at the Jockey Club in North Miami. Failed miserably. When will they learn?

For a little flashback, check out this 1994 article in the NYT ->

Odd that it says a guy named Chiavari ran A Mano. I only recall this being a Norman Van Aken place (in the Betsy Ross Hotel on South Beach).

Not that I know of, but how hard can it be -- as long as you can buy duck fat in bulk from Sysco?
