Celery: Have lots, what to cook with it?
Cream of celery soup is surprisingly delicious. Saute onions with chopped celery, leaves included, until soft. Add white wine and broth and simmer for a few minutes. Blend. Add salt and pepper to taste. Finish by stirring in a dollop of creme fraiche, if you have it. You can change this up with other spices or other veggies, but this is your basic celery soup.
You can make this even more interesting with the addition of celeriac (celery root is another name for it). Cook it in butter and good chicken or vegetable stock until tender, add the celery and some onion and continue to cook. Then puree with a blender (stick or countertop model) return to the pan, add some celery seed, season to taste, add about a C. of cream and garnish with chopped celery leaves
celery salad - just cut up the whiter stalks (the outer green ones are a little tough) and dress with olive oil, vinegar, salt, and some diced shallots and parsley.
celery risotto - a very flavorful and simple risotto...saute 1/2 cup diced onion and 1 cup of diced celery - add your risotto, stir for a few minutes, add some white wine, stir until absorbed, and then add chicken stock or water until finished about 20 minutes. Add an additional 1 cup of diced celery after about 15 minutes into the process. Finally add a tbsp of butter and some grated parmasian cheese and some ground black pepper.
