help with menu: salmon and?

I'm planning a dinner party for 6 this weekend. Will have Friday night and all day Saturday to prepare. (Very into cooking lately so don't mind spending the time on it and these are good friends so experimenting on them is ok - even if a disaster could ensue!) :)

So far I've got:

some sort of very simple green salad
small portion of pasta with mushrooms, asparagus, sun dried tomatoes, pine nuts and lots of fresh herbs
salmon stuffed with feta, cream cheese and spinach (sounds heavy but the filling will just be a thin layer)
cheese flan from sept. Gourmet for dessert (I can make this the night before and I know my friends are huge creme brulee/creme caramel fans so this is along the same lines)

I'm stuck on the sides for the salmon. Something green and some sort of starch. Maybe just a mix of roast veggies? I have no idea. Suggestions? Does the rest of the menu look ok?

Thanks!! I love this board!

  1. I was going to suggest either basmati or jasmine rice made in a broth but you have a macaroni dish. How about sauteed swiss chard? It's in season around here and we bought a beautiful bunch of 'Rainbow' chard at the farm yesterday. (It has stems of various bright colors and green leaves.) Olive oli, sliced onions and minced garlic, s&p and a dash of cayenne.

    1. I don't think you need another starch if you're serving pasta. Since tomatoes are so good right now, how about drizzling some halved tomatoes with olive oil, sprinkling them with garlic slices, breadcrumbs and parsley, and roasting them?
