Work-out lunch

My department at work (there are 6 women) is going to work out twice a week in our gym and take turns bringing in healthy lunches so we don't have to go out after all our hard work. We need ideas for filling lunches that aren't horrible for you. Help!!!

  1. What a great idea. I'd highly recommend this quinoa salad recipe from Cooking Light - every time I make it, it gets raves. Nice fiber, protein, carbs balance. You could easily put it together the night before and bring it in in a large tupperware and store it in the fridge. I'd let it come to room temp before serving. Would be nice w/cut fruit on the side.

    1. What about an entree salad with flank steak or salmon or lamb as a protein? If you want to add some carbs maybe a whole-wheat roll or something.

      Or grilled veggie sandwich w/ goat cheese or feta, side of chickpea salad for protein.

      1. I really like Ina Garten's Salmon salad. It would be great served on some brown rice. Also what about a light (read no cream or coconut) curry over rice? Serve either with some steamed broccoli? I also love a healthy but hearty soup or stew. I find after a workout at lunch I want something wholesome but with lots of protein. I also really like an asian soba noodle salad with lots of veggies and chicken. Don't forget snacky fun things like homous and veggies.

        Here is the salmon and caper salad
        A soba salad, just add chicken


        1. Turkey tacos with fresh salsa and lowfat cheese. Or a vegetarian chili.
