Driving thru Vegas Friday - need lunch suggestions but not east of Strip

We are heading to Colorado, leaving Friday 9/14, and driving from home in Sherman Oaks to Salina, Utah on that day. We should be approaching Vegas around 11:00 to 11:30 a.m. We want to have lunch there and hit the road again immediately, as Vegas is only the halfway mark for our drive that day. We don't want to veer too far from I-15 given the usual traffic (we are frequent Vegas visitors and we tend to drive around a lot). I just can't figure out where to go. Burger Bar is one possibility, I suppose, since the parking structure at Mandalay is relatively easy to deal with, and we'd probably be early enough to avoid much of the line. I've ruled out LOS and Lindo Michoacan as being too far east. In fact I don't think we want to head east of the Strip at all due to the sheer nightmare of getting around quickly in a car. Is there somewhere in one of the strip malls on Spring Mountain that might be good? We haven't been to any of them but we do frequent Pho So 1 at home. Any place downtown? We are open to cuisine but it has to be quite casual as we'll likely be in shorts. Anyone have any brilliant ideas?

      You might think about Cafe Ba Ba Reeba at the Fashion Show Mall...easy in easy out and a nice selection of tapas. They also have a new burger place there, Stripburger, that has gotten good reviews, but I haven't eaten there, so can't comment. Downtown, you can't go wrong with the Triple George, a nice bar/restaurant with a varied menu. I wouldn't worry about the shorts. On Spring Mt., we like Pho Vietnam and also Penang (Malaysian food).

        Thanks. As of now, Pho Vietnam is the winner. I checked out the menu online and it looks perfect. What non-pho dishes would you recommend there? Have you tried the bun?

        We've eaten a couple of times at Ba Ba Reeba and we like it a lot, but I had kind of ruled it out for this particular day. Still haven't tried Stripburger.

        I've never heard of Triple George, but will make a mental note for one of our future trips to Vegas.

          Sorry for the late response! We love the egg crepe thingy....it's an appetizer. Also, the sandwiches are excellent. All the noodle dishes are also very good. If you have a cooler you can always take leftovers with you!

            Oh, no problem. We did go to Pho Vietnam. We only had two dishes and my husband's was more Chinese, in that he had crispy noodles with some brown gloopy gravy and other stuff on top. He loves that kind of thing, I say blech. I had the appetizer dish with the grilled meatballs which you wrap up in rice paper and lettuce leaves and herbs and pickled carrots and daikon. It was interesting in that you have to dip your own rice paper, first time I did this as when I usually get this dish at our Pho So 1 in Van Nuys the wrappers are already "cooked" as it were. It was kind of hard to get it right, but I'm sure with enough practice I could do it well. Anyway I thought the dish was weaker than when I've had it at my local Pho So 1 (many, many times), although they did provide a lot of cilantro which I love, but no shiso which I also love. All in all it was adequate, but we didn't exactly dine through the menu. It was fast and cheap which was perfect as we still had many hours of driving ahead of us. And, it was absolutely gourmet when compared to the truly disgusting dinner we had that night at Mom's Cafe in Salina, Utah!
