Aged Beef in Portland, OR

Me again - I recently moved to the Portland, OR vicinity from the Philly/NYC area and I'm used to having excess to several butchers that offer aged beef. I have yet to find such a place in the Portland area. Any guindance is appreciated. Thank you.

  1. Gartner's Country Meats?

    I'm not a big beef eater, but they're a real old-school butcher shop. You might also try Viande ( but they seem more into pork than beef.

      I contacted Gartners a few weeks ago and struck out. No aged steaks. Right, Viande is mostly pork.

    2. Viande (in City Market), Phil's, Pastaworks (on Hawthorne), and Whole Foods all have aged beef.

      1. Foodday did a thing on butchers, and printed the following list. First yes/no is whether they have prime cuts / second is whether they have aging. Someone asked this a while back but I've just copied and pasted it again:

        1. I've had the 28 day dry-aged prime rib (cut into steaks) from Viande a few times and it rocks! Just ask them for what you want, if you want something other than prime rib steaks. They are usually quite accommodating there.

            columbia meats in the brooklyn neighborhood ( on SE Milwaukie ) have dry aged beef for sale...

                yup. Also, it's called Columbia Empire Meats.. not just Columbia.

          2. Noticed this past weekend that there was a vendor at the Hillsdale Farmers' Market selling 21-day aged beef. I think it was Highland Oak Farm, but I could be mistaken...

              Highland Oak does indeed have fabulous 21 day aged pasture fed beef.
              Steaks, ribs etc as well as oxtails, tongues and amazing, and inexpensive ground beef with an incredible steaky flavor.
              Rancher Jonathan Ehmig has a little spread in Scio, OR and is at the Portland Farmers Market on Saturday at PSU, and at the Hillsdale Market on Sundays.
              They have samples cooking at the market on Saturday, next to Springwater Farms legendary giant mushroom corner.
