Need a good cooking class in Portland 9/29-10/1

In town for a wedding just a few days and I desperately want to surprise my food loving fiance with an unexpected cooking class. I'd LOVE to take him to In Good Taste for the Asian themed class on the 29th but it's a demo class and I'm looking for something a little more hands on.

I'm not familiar with the area and would love some ideas. We're young, fun, and just interested in learning something new.
