Gioia Burrata at Angelo's Deli (Long Beach)
San Francisco hound here ... I am in Long Beach for a couple of weeks and popped into Angelo's Deli on LaVerne yesterday. While waiting for my soppresata to be cut, I noticed a sign for burrata on the chalkboard. Angelo's is ordering burrata from Gioia. According tothe lady at Angelo's, Gioia makes the burrata on Monday night and Thursday night, and Angelo's gets it on Tuesday and Friday. You have to pre-order and pre-pay for it ($12.99/pound) -- sounds like they smartly aren't ordering it unless they have a demand for it.
By chance, I had just emailed Gioia yesterday to find out their burrata production days. Looks like Angelo's will get it to me nearly as fresh as going to S. El Monte myself.

cheese is great.
easy to miss the place as you drive past.
they are open M-F
they are happy to sell to the public all day, til about 7pm
there is no minimum required, other than buying the package sizes they have.
i was told with certainty that they make BURRATA fresh every day,
NOT just Mon. and Thu.

Pizzeria and Osteria Mozza get their burrata from Gioia. The owners of Gioia know Mario Batali. I suspect Fraiche may get theirs there too.
I recently ate some Gioia burrata the same day it was made, purchased directly from them. Can't get fresher than that. And then I OD'd on their burrata for the next couple of weeks. I can't look at burrata for awhile now.
