More from the CSA...

I will be getting radishes and beets in the next drop of my CSA and I'm not a fan of either. However, I'm having a party and feel it will be the perfect time to unload my unwanted vegetables. But what can i make with beets and radishes? How can they be morphed into an appetizer?

  1. I've roasted both in the past, together, tossed around in an oil/garlic/herb mixture. The roasting concentrates the flavor. Orange beets will turn an unappetizing black if the heat is too high, FYI.

    1. You can make a beet dip (adapted from a cookbook somewhere along the way). Anyway, roast or boil the beets, then peel, grate or chop small, mix with yogurt, pomegranate molasses, salt and a touch of ground coriander. Sometimes I add mint, because I love it.

      Radishes are great sliced and topped with goat cheese mousse (or just goat cheese lightened with cream). Radishes are also great sauteed in butter or oil - it will make you like radishes more. Tossed with some dill, and I am in heaven.
