Eaten there a few times and everything I've had has been delicious. Can't say that any one dish stood out that much that I would consider it a "must eat" though. I would advise you to just go, see the menu, and order what sounds best to you at that time. I guarantee you will enjoy it.

Agree completely. Cookshop IMO is not a destination place, but rather a neighborhood restaurant that you can consistently get great food with fresh ingredients. Nothing will "wow" you per se, but they are in most cases delicious and satisfying. If they have fresh whole fish, it will be a great choice. As sam1 mentioned, pork is well-prepared. The menu specials, as Hungry Esquire mentioned, is what I will recommend.
If you have a chance go to Cookshop for brunch. It is overall better than the dinner experience.

thanks for the imput-- We are from chicago, enjoy the dining experience, and just want to make a good choice for dinner, as we feel like we have been hoodwinked several times by high cost-low quality meals on previous trips to NYC--I assume that most are saying that in general this should be a good choice for a nice dinner--

i was there just a few weeks back. the chicken liver mousse for an appetizer was quite good...as was my pork dish...with some sort of salsa verde sauce...it was huge hunks of pig...very very tasty. crackling skin and all.
desserts were surprisingly meh...i enjoyed the pot du creme though.
