Where can I get a great omelette?

One thing I haven't been able to find is a great egg white omelette. I love when an omelette is fluffy, filled with vegetables, and not greasy. Served a plate or, better yet, in the skillet, where can I get one of these in the city?

    I don't like egg white omelets, but my friend really enjoyed the one she had at Schiller's, and commented on how good it was. I think initially she had just ordered it to be healthy but then was pleasantly surprised.

      I second the Schiller's omelet. It's really thick and fluffy.

      Another good one is the huitlacoche omelet at Dos Caminos - you can ask for egg whites only. It's awesome.

      I had the egg white frittata at Resto and it was alright. Light and fluffy.

        Comfort Diner surprisingly has a delicious omelette, complemented by sweet potato fries. Mayrose also has a delicious omelette. GOOD in the W. Village is also great, as is Petite Albeille.. I like mine fluffy.
        You can also try Ametelier on Christopher for a deicious frittata.

          L'Express at the corner of Park Ave. South & 20th St. makes delicious French omelettes.

            Thanks to everyone who replied! I remembered that I liked the omelettes at Friend of a Farmer, but the wait is just so long there on the weekends. I'm trying to avoid brunch places that have a long wait... I live near Comfort Diner so I'll check that out.
