Stephane Lacroix at the Dining Room at the Ritz Carlton made some amazing pairings last time I was there.

Rajat Parr, hands down. Even other sommeliers will say Raj (Michael Mina, not a fan of the restaurant but the wine program rocks).

Alex Fox at Myth
Everyone we've talked with about wine at Quince (which I think has the best wine program in town). Christie Dufault runs the program.

seconded re: alex fox. four of us had a wonderful dinner at myth recently with excellent wines chosen by him. he was very personable, and when one of the diners didn't love our dessert wine and mentioned it to him in passing, we quickly received a free dessert with wine pairing that everyone absolutely fawned over. it was wonderful.
