        <content>Me swift and strong and need good hunting ground (STORE) for RAW Bison / Buffalo steaks and burgers. Big RAW Turkey lags wanted also. Oh ya, also want Big tubers &#8211;  turnips, carrots, parsnips, and rutabagas.  Finally, Rock Candy but me want big rocks.

Turkey legs I'd say Bristol Farms, Costco
Rock Candy they have at any of the bulk candy stores... one on 3rd street promenade, one in the santa monica mall</content>

      <content>Thanks Emme. Can you make a recommendation for a specific cut, or particular buffalo steak, that would be best for my group? 

I have never had a buffalo steak &#8211; only burgers. Although I enjoy strong meat flavor, I must satisfy my party guest (those picky Homo sapiens) who prefer tenderness over flavor and actually do not enjoy strong flavor at all. From what I have read there is little, if any, difference in flavor between pen-raised buffalo and pen-raised cattle. That sounds great. Now, can you help with which steak would be most tender? </content>

      <content>The Whole Foods steaks come frozen, so I don't think there's much choice there.  You might ask the butcher though behind the counter if he has fresh steaks or if he could special order them for you if you're averse to the frozen or would like to choose a different cut.  [My ex used to make a buffalo steak stew when he was trying to eat really lean and put on muscle.]

Trader Joe's also sells buffalo steaks in the freezer sections.</content>

      <content>Buffalo are not raised in pens. They are raised in pastures with some producers finishing on corn. Linder, available at the HFM on Sundays, does not. I think their quality if much better than WF. It is frozen and you will need to get there when it opens to get your pick of cuts. 

I think bison tastes a bit sweeter than beef and also reminds of aged vs. fresh beef. (good) The steaks needs to be cooked fairly rare otherwise they will be dry. There was a NYT article on cooking bison a few weeks ago if you want tips.

You can pick up big vegetables at the HFM as well. Turkey legs are available at WF or at Farmer's Market (3rd and Fairfax).</content>

      <content>Caveman do well in Gelson's, 99 ranch market, Greenland market, Mitsuwa for meat and veg.

Rock candy tougher.  Try using magical internet box and going to Garvey Candy.
