Out of all of the local chains, I find they're the most accomodating of special needs - they also do gluten-free, which is great for some of my friends with multiple allergies. I believe there's at least one pizza on the menu that's entirely vegan (with soy cheese), and there's also the option to build-your-own without cheese or with soy cheese. You should also try Fresh - they do great vegetarian/vegan meals (including brunch) and have a few locations scattered around the city. The closest to Harbourfront is on Spadina just south of Queen.
