pecan crusted catfish
I worked at a place that did it really well. But he wouldn't let me get close to the recipe, and since the owner's drunken firing spree, I'm not ever going to get it. I picked up a deep fryer this week, and I have some catfish, so I'm going to give it a shot. He said there was "garlic and onions" in it, and I assume powder. The breading had cornmeal in it. It was crisp on the outside, light on the inside. I also know it was fried twice. Can anyone help me through it?
I'm not sure where you worked, or what exactly you want to recreate other than to recite a generic recipe. What can help you though, is a trip to Tom's Parkside Deli, if you are in the Lafayette area. Tom knows some catfish, and he is a really nice guy.
