pecan crusted catfish

Danimal Aug 21, 2007 12:29 AM

I worked at a place that did it really well. But he wouldn't let me get close to the recipe, and since the owner's drunken firing spree, I'm not ever going to get it. I picked up a deep fryer this week, and I have some catfish, so I'm going to give it a shot. He said there was "garlic and onions" in it, and I assume powder. The breading had cornmeal in it. It was crisp on the outside, light on the inside. I also know it was fried twice. Can anyone help me through it?

I'm not sure where you worked, or what exactly you want to recreate other than to recite a generic recipe. What can help you though, is a trip to Tom's Parkside Deli, if you are in the Lafayette area. Tom knows some catfish, and he is a really nice guy. He will be easy to find, just look for the bearded guy with shorts on in November. Strangely, he doesn't wear long pants until it snows. Hope this helps ya. Parkside Deli 1902 Scott St.
