Freezing Chocolate Flourless Cake

I am having dinner party and would like to make ahead and freeze a Chocolate Flourless Cake. I was going to use the Cook's Illustrated recipe. Has anyone tried freezing this recipe?

  1. I have not tried this recipe. I worked at a Cafe that made them and kept them frozen. They would have to be protected from the air of a freezer- tupperware, gladware, etc. High fat foods can pick up "flavors" from a freezer.
    You would want to let the cake defrost in the refrigerator for 24 hours. Letting it sit out for an hour before serving also is recommended.

      Thanks for the information. I'll be sure and protect from the air of a freezer and follow your defrosting instructions. It will only be frozen for 6 days.

    2. I haven't tried the CI recipe, but I did make a flourless choc cake and freeze it successfully. I wrapped in plastic and then in foil. I only kept it about 2 weeks in the freezer. Do let it defrost overnight in the fridge and remove about 1-2 hours before serving. No one detected this was made in advance and it made my life a lot easier to be able to prepare in advance. I plan to do this again for Passover, as there is little choices for dessert and this was a great one. I decorated it with strawberries, raspberries and blueberries.

      1. The David Glass flourless cake is very good, and comes frozen. It also says that it can be refrozen, which I tried once with good luck (the same day that I defrosted it). I imagine that most of the cakes would behave similarly.
